The busy life

As you can tell from my blog we've been busy! I am making it a priority to try to blog at least weekly.

Tonight for dinner I am making a super easy dinner that is totally GF. Rotisserie chicken cut up into GF corn spaghetti noddles with Alfredo sauce, some sauteed onions and garlic. I put it in an oven safe dish and cover in parm cheese. Cook on 350 until brown and bubbly! It is so good and so easy. I am all about easy these days. Jered has been finishing his residency (known as PEAK) and has been working some long hours. Ela and I have been enjoying dinner alone most days so the easier the better!

I have been craving fresh fruit. I cannot get enough. I've been really eating healthy this pregnancy to avoid gaining the massive amount of weight I did when I was pregnant with Ela. Peaches and strawberries are in season now. I just made a giant bowl of watermelon, peaches, cherries, strawberries, raspberries and blueberries! YUM! I've been eating a big bowl of GF rice krispies with blueberries and strawberries. It has been hitting the spot. Ela loves strawberries too but really wont eat any of the other ones. She's such a texture sensitive little lady. I have to find sneaky ways to get all her nutrients in.

Last night, Jered bought grass fed steaks from Harrys. We marinated in soy sauce, garlic and a little beer. It was so good! I made a spinach salad and baked sweet potatoes. It was a great finish to a fun weekend.

  2. That dish sounds really good. I always wonder what to do with leftover rotis besides putting it in salad. And adding beer to steak marinade sounds so yummy! Can't wait to be in Atlanta with you.
